Champ Divin Cotes du Jura Castor 2019 CS20230718 Tastes of cooked agaveChamp Divin is a small biodynamic estate in the Jura, certified Demeter since 2011 and farmed entirely without synthetic inputs. 'Cuve Castor' is their flagship blend: roughly half Chardonnay from deep clay limestone, half Savagnin from grey marl, vinified in the ouill (topped up) style which means no flor, no oxidative funk, just bright and direct fruit. The result has been called a 'baby Vin Jaune' for its complexity, but with the freshness dial
